How to Cook Mac 'N' Cheese Southern Style

Southern Style as in southern part of Germany ;)


  • 3 onions, cut lengthwise
  • 125 Grams bacon, organic, cut in cubes
  • 200 Grams cheese, preferably Emmentaler
  • 3 Cups flour
  • 8 eggs, organic and freerange
  • 1 Teaspoon salt
  • 1 Tablespoon butter
  • Instructions

    Step 1

    Cut Bacon and onions

    Step 2

    Fry Bacon & onions with a little butter in a heavy cast iron pan until nice and brown

    Step 3

    grate cheese

    Step 4

    For the dough combine flour, eggs and salt. Beat really thoroughly with a wooden spoon

    Step 5

    Utensils you want to have ready

    Step 6

    use your big pasta cooking pot. Add a pinch of salt to boiling water

    Step 7

    fill some dough in the "spätzlepresse"

    Step 8

    press dough in boiling water

    Step 9

    let well up

    Step 10

    use skimmer to get spätzle out of boiling water

    Step 11

    place spätzle in bowl and add a layer of cheese, then some bacon and onions

    Step 12

    repeat until all dough is used up

    Step 13

    enjoy with some salad greens
