How to Cook Mac and Cheese in the Alto Shaam Combi Oven

Make fresh Mac and Cheese in the Alto Shaam CTP Combi oven.

Supplies

  • 1 Alto Shaam Combi Oven
  • 1 Aluminum Full Pan
  • 1 Pounds Whole Grain Macaroni
  • 1 ½ Quarts Milk
  • 4 Ounces Butter
  • ½ Tablespoons Dry Mustard
  • 3 Pounds Shredded American Skim Milk Cheese
  • ¼ Teaspoons White Pepper
  • Instructions

    Step 1

    Gather all ingredients.

    Step 2

    Program Alto Shaam Combi ovens first step to Preheat to 325 degrees.

    Step 3

    Pour the milk into the Aluminum pan and add to the Combi while it preheats.

    Step 4

    Add butter to the milk as the combi preheats.

    Step 5

    Program the second step of the Combi to 284 degrees on combi, at 80% fan speed, 90% humidity for 5:00 minutes.

    Step 6

    Add the pasta to the milk mixture.

    Step 7

    Then add the Cheese and place back into the Combi.

    Step 8

    Program the third step to Combi 480 degrees at 80% fan speed, 90% humidity for 5:00 minutes.

    Step 9

    Stir the mixture to blend the ingredients together.

    Step 10

    Finally, program the fourth and final step to steam at 212 degrees at a fan speed of 80% for the last 5:00 minutes

    Step 11

    Once the Mac and Cheese is complete, wrap and place in the holding cabinet to finish until service.
