My ingredients. Cook rice or you can even use any left over plain rice. Add salt and lime juice as per your taste to the rice and ensure you mix well. It should taste slightly sour with the lime juice

On medium heat In a pan add olive oil, mustard seeds, Chana dal, ground nuts, green chillies, dry red chillies, curry leaves, coriander leaves after they get a nice color add turmeric powder to it.

Make sure you don't burn after adding turmeric. Be generous to turmeric as it would give you color to the rice. I used 1/2 tbsp for 2 cups rice. After that get the rice into the pan and mix it well.

Mixed it perfectly, ensured it is all coated well. And made sure no lumps. Heat it for a minute on pan after adding rice. To go along with it fried some papad. Kids would love it.

Tada.. 😛 There you go. In south India it is known as lemon rice. Don't be confused as I used limes gave the name as lime rice. 😉
