How to Cook Layered Enchiladas

Supplies

  • 20 pack corn tortillas
  • Can sliced olives
  • 1lb shredded Mexican blend cheese
  • 1/2lb to 1lb of shredded or ground meat
  • 1 28oz can green or red enchilada sauce
  • 1/2 large onion
  • Optional toppings: sour cream, salsa and guacamole
  • Instructions

    Step 1

    Ingredients and my cooking supplies Preheat oven to 350

    Step 2

    I like to use shredded chicken or turkey in ours. I have also used ground meat, but I prefer shredded meat better. Anyways either shred or chop up the meat. I chop the onion and mix it into the meat

    Put a layer of enchilada sauce in your pan, put remaining sauce in bowl

    Dip tortillas in sauce and layer on the bottom of the pan so it's covered

    Next add chicken onion mixture

    Step 7

    Then cheese and olives (optional). I have also added green chiles before but I need this one to be kid friendly =] Bake until cheese is melted, about 20 min. Allow to cool and enjoy!
