In a thick sauce pan add the lamb, onions (cut into chunks), garlic, ginger, 1 teaspoon salt and 1 cinnamon stick along with enough water to cover the mixture . I put about 4 big glasses of water.
Bring to the boil on high heat, once it has bolied turn down the heat and cover the mixture with a lid , leave to cook for 45 minutes or until there is very little water remaining.

Before the water has completely dried add in the tomatoes.
Next add in the spices and stir until water has completely dried up.
Now add in the oil and cook for 5 minutes stirring occasionsly.
The lamb karahi should look like this. You can leave it like this or add abit of water for some gravy ( if adding water bring water to the boil and simmer for an additional 5-10 minutes).
Place the lamb karahi in your chosen dish.
Garnish with green chillies, corriander and thinly cut slices of ginger
Serve with home made/ store brought naan and a big dollop of yogurt.
