Pour cooking oil into roasting pan. Set your oven broiler to "high."
Layout chicken parts in pan. The flavor of the skin adds to the taste of the dish is an important part of the recipe.
Coat chicken parts with extra virgin olive oil. A light coating is sufficient. I like to pour rather than brush.
After the olive oil, smear a 1/4 teaspoon of crushed garlic to each chicken part. Time permitting, I use fresh, thinly sliced garlic cloves.
A pinch of Sage is next...
A few shakes of salt and pepper.
Cut and squeeze a whole lemon onto all chicken parts.
Put roasting pan in oven. Cook time will vary with temperature of broiler. 30-40 minutes should be fine. Turn roasting pan at least once during the cook. Chicken temp should reach 165 degrees.
Prepare you sides. Fried potatoes are great. Add some greens or a salad too.
