Add a pinch of salt to the eggs and whisk them smooth
Chop the spring mix fine
Wash the lettuce leaves and blotch any moisture using a kitchen towel
Thin slice of pasteurized unsalted butter for the eggs
Couple slices of salami - you can replace this with ham too if it suits you
Heat pan on high for 2 min. Now turn down heat to med-high. Melt the butter and add the spring mix to it
Sautée spring mix for 30secs and pour the egg mixture evenly. Cook 2mins on med heat until firm watching the corners. (optional): sprinkle a few chilli flakes for the contrast.
Toss over and turn off the stove
Fold the eggs into half and cut them using the spatula
Spread the lettuce wide and Place one-half of the egg in the middle. Place a slice of salami on the egg.
wrap it using the edges of lettuce
Add few melon slices to the side and your healthy paleo-friendly egg-salami green wrap is ready
