Turn on the grill/oven
Slice the aubergine in half length ways.
Score deep criss cross shape into each 1/2
Put the aubergines flesh side up into a roasting tin.
Pour 3 good lugs of olive oil over each 1/2
Sprinkle with salt and pepper
Put in the grill/oven for 10 minutes or until the flesh has turned a dark brown.
Tip the aubergine and oil into a bowl .
Add a spoon or two of Greek yogurt .
Squeeze 1/2 a lemon and add to the mixture.
Peel a clove of garlic and add to the mixture. Use less garlic of you are going out later :)
Use a hand blender to whizz up the mixture.
Enjoy hot or cold.
