How to Cook Fresh Lentil Soup

Tasty red lentil soup for 4 persons. Serve with bread and a spoon of sour cream on top :)

Supplies

  • 2 Tomatoes
  • 2 Garlic
  • 2 Carrots, medium size
  • 0.50 Red chili pepper
  • 2 Centimeters Ginger
  • 1 Cup Spinach
  • 4 Centimeters Leek
  • 0.50 Parsnip
  • 0.30 Zucchini
  • 1 Teaspoon Fish sauce
  • 3 Teaspoons Chipotle salsa
  • 2.50 Deciliters Red lentils
  • 1.50 Cube of veggie bouillon
  • 0.50 Cilantro paste
  • 0.50 Lime
  • Instructions

    Step 1

    Chop all the veggies except tomatoes and spinach.

    Step 2

    Put the tomatoes in boiling hot water for ca 20-30 sek.

    Step 3

    Take them up and peel the skin off. After that chop them up.

    Step 4

    Fry the veggies in a pot

    Step 5

    Add 5 deciliters of water and 1,5 cube of concentrated vegetable bouillon. Let it heat up for 5 min.

    Step 6

    Add 3 teaspoons of chipotle salsa. It's fine to take chipotle paste, figure that 1 teaspoon is enough. If you don't have this at home it's fine with out, it just adds a little bit of smokey flavor.

    Step 7

    Mix the soup a bit, not to much. It should still have some pieces left for a nice texture.

    Step 8

    Put 0,5 teaspoon of cilantro paste (if you have fresh, stir it in before served).

    Step 9

    Add the red lentils and let it cook for ca 15 min. Check how long it says on the package.

    Step 10

    Voila! Serve with squeezed lime, sour cream and bread.
