Fiddleheads are available in local grocery stores only a few months a year (from may to july I think) this is the first time I've made them. It tastes pretty good!
First, trim of the ends of the fiddleheads.
Slice the red onion
Cut up the bacon into bits. I chose an extra lean bacon.
Sautéed the bacon for about 5 min. I didn't put any oil in my nonstick pan. The bacon would be enough.
Add the red onion slices and sautéed until the onions are soft. About 8 min.
I put a little olive oil into a pot of boiling water and boiled the fiddleheads for about 5-7 mins to make it tender.
Add the drained fiddleheads into the pan and sautéed for another 5-7 mins with the bacon and onion. I didn't add any salt because the bacon had enough salt already.
Add a couple of squirts of lemon juice to brighten the flavor.
Add some fresh cracked pepper and sesame seeds and enjoy!
