Wash, peel and chop those carrots!
Add them to your pot. No heat at this point!
Peel & chop your onion.
Add that to the pot. Remember, in the end the soup will be pureed so the shape of your veggies doesn't matter.
Fry on low heat for 1-2 mins. to get everything mixed up.
Add cauliflower and chicken broth.
Cook until all the veggies are soft. About 20 mins. (cooking time will vary!) Turn up your heat.
After 15 mins. Almost done!
Blend! You could put it in a blender, food processor, or whatever.
Add cheddar cheese (optional)
And spices. Whatever you'd like! I'm using black pepper, salt, parsley, cumin, and a lot of cayenne pepper!
