Boil a shallow pot of water to clean the catfish
Remove pot from heat, dredge fish in hot water for 20 seconds on each side to loosen dirt
Use a knife to scrape off dirt
Clean the inside as well
Once the fish is clean, cut into 1 inch pieces, pat dry with paper towels.
Thin slice 3 stems of scallions
Marinate the fish with 1 tsp brown sugar, 1/2 tsp salt, scallions and fresh cracked black pepper for 10 hours.
Mince one shallot, 2 cloves of garlic and the stems of 3 green onions
Prepare the pork belly by boiling in water with 1 tbs cooking wine for a few minutes
Remove the pork belly from the water and slice thinly
Drizzle caramel over the fish until coated
The final marinated fish should look like this
Cook pork belly in frying pan until fat melts and pork is brown
Add green onion, garlic and shallots, and tablespoon brown sugar to the pork
Add fish to the pan and brown both sides, once browned add 3 tablespoons of fish sauce then simmer for 5-10 minutes
Add 1/3 cup of coco Rico or fresh coconut juice and water, reduce
Simmer until the sauce is reduced, add brown sugar, salt and pepper to taste.
Garnish with green onion and serve!
