How to Cook Cider Dijon Pork With Roasted Apples

Found this recipe by Curtis Stone on Epicurious today and decided to give it a try. The verdict is.. Yum!

Supplies

  • 6 Pork chops, boneless
  • 1 Red skinned sweet potato
  • 1 Bulb fennel
  • 2 Pink lady apples
  • 2 Tablespoons Oil
  • Salt and pepper
  • Rosemary
  • 1 Cup Apple juice
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon Butter
  • Instructions

    Step 1

    Preheat oven to 450°F with baking pan in oven.

    Step 2

    Core and cut apples into eighths

    Step 3

    Quarter the fennel bulb

    Step 4

    Peel and cut into 2 inch pieces

    Step 5

    Toss in oil with seasonings.

    Step 6

    When preheated, place veggies on hot pan and return to oven. Bake about 25 minutes, turning once.

    Step 7

    Season pork with salt and pepper.

    Step 8

    Pan fry pork to brown on both sides, about 8 minutes.

    Step 9

    Reserve to plate.

    Step 10

    Add apple juice to pan, cooking on med-low heat. Scrape up brown bits with a wooden spoon.

    Step 11

    Reduce slightly and whisk in Dijon.

    Step 12

    Finish with a pat of butter.

    Step 13

    Serve with roasted veggies and a salad!
