How to Cook Chicken Madras Boom!

Supplies

  • 700g chicken breast or thigh
  • 3 cloves
  • 2 cardamom pods
  • 5 tbs oil
  • 2 large onions finely chopped
  • 4 cloves garlic
  • 2.5cm ginger finely chopped
  • 1 tsp red chilli powder
  • 5 green chillies
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp turmeric
  • Salt to taste
  • 1 tsp nutmeg
  • 400g tin tomatoes puréed
  • Fresh coriander
  • 1 tsp ground garam masala
  • Instructions

    Step 1

    Step 2

    Heat the oil in a large pan, once hot add the cloves and cardamom pods and sizzle.... Add the chopped onions and cook till onions are a dark brown

    Step 3

    Add the chillies, ginger and garlic and stir and cook in for 30 seconds. Add the chilli powder, cumin, ground coriander, turmeric and salt and mix in for another 30 seconds.

    Step 4

    Add 50ml water and the chicken and cook in for 2-3 mins

    Step 5

    Add the tomatoes and nutmeg and cook on a low heat (slow cooker) for 4-5 hrs or in the pan on the hob for 20-30mins

    Step 6

    Once cooked mix in fresh coriander and garma masala .... Serve with rice and enjoy. Madras boom

    Step 7

    Toss some coriander in the rice and garnish on top
