First chop 2 onions, 4 garlic cloves,2 tomatoes & I used a yellow bell pepper cause I didn't have a jalapeño on hand
Add onions & pepper to a tbsp of sunflower oil & add a punch of turmeric (I like the color it turns the onions)
Once your peppers & onions start cooking add garlic & turn the heat on medium-low (I out mine between 4&5)
After a minute after adding garlic add your chopped chicken (better to have chicken with bones in it but I'm using what I have available in my fridge so boneless it is)
I'm not too much of a measurer when it comes to this step but I add about 4 tbsp of curry, 1 1/2 tbsp of basil leaves, chilli powder, coriander & cumin. Add one bay leaf & 1 tsp of paprika and cayenne
Next I add my tomatoes & cover & let cook on med-low for about 25 minutes. I usually add cilantro which I was out if but usually I add 1/3 cup of chopped cilantro in the last 10 mins.
Heat you up a few whole wheat tortillas and enjoy!
