Some flour 150g
2tbsp of this stuff
150g of soft brown sugar. If you dont have any then who cares as long as its sugar like this.
A pinch of salt.
Mix the dry stuff. Add nutmeg if you want too!
2 eggs lightly beaten unless ure angry.
Add all this other stuff into that floury mix with 5tbsp if olive or sunflower oil and 25g of melted butter
Mix it all together
Zest one lemon
Shredd 200grms ish , basically 2 carrots
Weigh 20/30 grams of walnut and you could also add the same again of raisins if needed.
Mix it all around
Cook in a greased tin in an preheated oven at 180c for an hour.
Use some cream, and keep beating it whilst adding a ton of caster sugar a spoon at a time untill you are happy and its tasty.
When the cake is done, test its springyness
Slice right through the cake to split it into two. Add the creamy stuff...
Then thats it. All done! Only problem is that i vould have made double.
