This is a batata. The flesh is somewhat pinkish with brown spots. It is grown in the Caribbean and has a flavor that is similar to a sweet potato, yet more starchy.
It is a sweet potato variety, you can use the batata the same you would a sweet potato. You can bake it,fry it,roast it, boil it etc.
Its an exotic veg., it might be hard to find. Check the Spanish markets they usually carry it along with other root veg.such as yucca, yautia, guineo.
Today I will fry it. It's so good. Slice the batata about 1/4 inch thick. Add them to a bowl of cold, salted water. Let it sit in the water about 30 minutes.(optional)
After 30 minutes remove the slices and pat dry. Now lets continue to the next step, FRYING First lets start by adding some oil to a pan and set it over medium high heat. Add the slices of batata
Cook it until both sides are browned. They are so good. They puff up and get crispy in the outside and moist and tender in the inside.
When finished cooking put them on a plate lined with paper towel to absorb the extra oil
Enjoy as a snack or a side dish. I just love to munch on these sweet fritters . You can follow these same steps with yucca root. Yucca is so good fried.
