How to Cook Aviyal ( South Indian Mix Vegetable Dish)

This is my 5 veggie fix and can be made vegan. Unlike most Indian dishes - this has no onion, garlic or ginger but loads of flavor from coconut, green chilli, curry leaves and cumin.

Raw Banana or plantain, Yam, Drumstick, Snake Beans, Snake gourd, Pumpkin, Winter Melon, Carrot and Cucumber. For vegans add mango/tamarind (use this instead of yogurt).
