Chop up the onion, celery, garlic and carrots
Chop the bacon (clean the fat if possible)
Adding in bacon is optional, but I think it really adds a kick to the sauce.
Olive oil in (don't be cheap)
Fry the chopped bacon for a couple of minutes
Add in the vegetables and fry until softened
Add on the minced meat and stir for a few minutes until lightly cooked
Now add the red wine. You can add anywhere from 1 cup to a half bottle - I put 2 cups
Leave the pot open and let the red wine simmer in for a few minutes
Add salt and pepper and throw in the tomatoes and tomato paste
If the tomatoes and wine don't generate enough liquids then add in a couple cups of water
Cook for at least an hour until you reach a thick tasty sauce
Cook up 500 grams of spaghetti and you're all set.
