How to Cook Asian Pork Noodle (Soup)

Supplies

  • 500 Grams Minced pork
  • 200 Grams Pork loin
  • 8 Pork ball
  • 100 Grams Pork belly skin and fat
  • 1 Gram Chicken cube
  • 1 Bunch Baby choy sam
  • 2 Rice vermicelli
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Sesame oil
  • ½ Teaspoons Soy sauce
  • 2 Teaspoons Corn flour
  • Instructions

    Step 1

    Part 1: Preparation

    Step 2

    Marinate the minced pork with 1 tsp corn flour, 1/2 tsp salt, 1/2 tsp pepper, 1 tsp soy sauce and 1/4 tsp sesame oil.

    Step 3

    Mix well. Add some water (about 2-3 tbsp) to make it more sticky.

    Step 4

    Cut the pork loin into bite size. Marinate it with 1 tsp cornstarch, 1/2 tsp salt, 1/2 tsp pepper, 1 tsp soy sauce and 1/4 tsp sesame oil.

    Let the pork marinate for at least 30 minutes.

    I bought this pork ball from the supermarket.

    Prepare your fav green vegetable. I go with baby choy sum. You can choose bak choy, baby kai lan etc etc.

    Soak the rice vermicelli with water.

    Step 9

    Until you see it turn white. Usually takes bout 10 minutes.

    Drain it.

    I use chicken cube as the soup base.

    Step 12

    Cut the pork belly skin/fat to uniform, small cubes.

    Part 2: Prepare fried lard & lard oil

    Heat the pan and lay all the lard on top.

    Careful with the oil splashing everywhere. Got this from Ikea. Does help.

    As you can see the oil start piling up. Once it turn golden yellow turn off the heat as it will continue cooking for awhile.

    Busy taking photo and mine got slightly burned 😣. You can keep the remaining in close container and leave it in room temperature.

    Part 3: Cooking

    Prepare half a pot of water. When the water boil, put 1 chicken cube.

    Once the chicken cube dissolve, add the sliced pork loin.

    Press the minced pork with the back of the spoon.

    Scoop a small bite size and drop it in.

    It doesn't have to be a perfect shape.

    Let it boil until you see all the meat start to float. Taste the soup and see if you need to add salt or not. I didn't add any in mine.

    Add the pork ball and cook for another minute.

    In a separate bowl, boil a pot of water.

    Once the water start boiling..

    Blanch the vegetables.

    After remove the vegetables, add the rice vermicelli.

    Cook for 10 seconds and drain it and put in a serving bowl and discard the water.

    In a separate pot, scoop the pork soup enough portion for 1 person. This way, you can keep the remaining in the fridge.

    Crack an egg and let it cook awhile.

    Pour into the bowl with the cooked rice vermicelli.

    Place the vegetables and some fried pork lard on top and ready to serve.

    Note: This ingredients enough to cook for 2-3 person depending on their appetite.
