This is lovely, quick and tasty dry spaghetti dish. Hope you all enjoy as much as the people I've cooked it for have done!!
The ingredients! Garlic not shown here.
Chop up the anchovy into small pieces.
Put the 2 handfuls of Rocket, crushed Garlic, Chilli, Oil and chopped anchovy into a pan and stick on a medium heat and mix/stir occasionally. Your not frying! The oil is part of the sauce.
After about 10 mins you sauce should look like this. No lumps of anchovy as it should disperse into a liquid sauce. Once it's looking like a sauce, take of the heat.
Once the sauce is off the heat, chuck the spaghetti into salted boiling water and cook according to the instructions on the packet. A few mins before its ready, put the sauce back on the heat to warm.
Drain the spaghetti once cooked and put back in the pan. Then empty all your warmed up sauce on top and mix well so all the spaghetti is coated.
Serve the spaghetti with a bunch of rocket on top and some lovely parmesan shavings! Enjoy!
