Start by melting a big cube of butter over a medium heat.
Grate loads of mature cheddar cheese.
Add a table spoon of flour to the melted butter.
Mix until it forms a paste.
Add milk to the flour and butter paste.
Mix until incorporated together.
Add more milk and mix together again.
Add more milk.
Keep on adding milk until you have a smooth thick sauce that will coat the back of a spoon. To loose add more flour, to thick add more milk. Always stir constantly over a medium heat.
Add a small amount of double cream and stir in.
Add loads of grated cheese, I've used mature cheddar but feel free to add whatever type of cheese you like.
Stir in until the cheese has melted. Add salt and pepper to taste.
Boil salted water.
Get the pasta in the water and cook until there is still some bite to the pasta.
Drain the pasta and put it in a large baking tray, pour the cheese sauce over the pasta and stir.
Put in the over for 10-15 mins on a medium heat until the cheese sauce is bubbling, and eat it all before it gets cold!
