With a sharp knife, make incisions in the fillet and push the garlic slivers inside the flesh. Sprinkle with salt and pepper and place fillet on a greased oven dish.
Switch oven on and turn up to the highest temperature. When this has been reached, put the fillet of beef in and IMMEDIATELY switch off the oven.
Leave the filet of beef in the oven while it cools down. Resist the temptation to open the door to have a prod!
When cool, take out and slice - you will have the perfect, pink-fleshed, tender fillet of beef!
