How to Cook a Nice Surf and Surf Dinner

  • 1.5-2 pounds halibut, skinless
  • Salt
  • Pepper
  • Seasoning of your choice
  • Olive oil
  • .5-1 pounds large scallops rinsed and dried
  • Salt
  • Pepper

  • I can black beans rinsed
  • 2 yellow bell peppers chopped
  • 1 cucumber seeded and chopped
  • Half a large red onion grilled
  • One bunch green onions (white and light green)
  • Large handful cherry tomatoes sliced
  • 2 teaspoons fresh dill chopped
  • 3 tablespoons flat leaf parsley chopped
  • Juice of one lemon
  • 1-2 teaspoons balsamic vinegar
  • 1-2 teaspoons honey
  • Salt
  • Pepper
  • 1 Teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • Instructions

    Step 1

    Time for another easy dinner! As always preheat for cooking method of choice. I used my grill, nice and hot coals are white

    Step 2

    The black bean salsa is super simple. Take everything from the black beans down, chop or measure and add to a bowl

    Step 3

    For the black beans, drain and rinse them well. This will remove almost all of the added sodium from packaging

    Step 4

    Now just let them hang out and drain

    Chop peppers, add to bowl

    Cucumber, easy way to seed it is cut in half and use a spoon to dig it out

    You can peel or or leave it with the skin, just wanted to show I prepped mine.

    Add it to the bowl, see the trend! Super simple

    I used the white and light green parts of the green onion. Rinsed of any dirt.

    Sliced and add it to the bowl

    The parsley, throw a quick chop on it and add it to the bowl

    The cherry tomatoes, sliced and you guessed it, added to the bowl

    A good chop on the dill and add it to the bowl

    I only used half the onion, take half of the onion paper skin and all and...

    Right on the grill! It adds a nice chat and flavor to the dish. ( side note you can also add corn to this and grill it the same way as the onion)

    Flip it once or twice... Cooking for 5 or so minutes don't worry if it blackens or smokes a bit.

    Nice and charred. Also I love these gloves I can put my hand on the grill pretty much and not feel the heat. Great when cooking kabobs

    Peel the burnt skin off the onion and chop.. Then of course add it to the bowl

    Juice the whole lemon into the bowl

    The balsamic, into the bowl I didn't take a pic bit also add the honey, a teaspoon at a time and stir, then taste for your level of sweet desired.

    The red pepper flakes for a bit of kick

    Everyone is at the party. Add the olive oil as well and stir, taste, say yum and put in the fridge until you eat.

    Time for the proteins, fish and scallops rinse and dry both of them well.

    Like so, season both sides I used salt, pepper, fish seasoning (such as old bay) and I used a garlic herb seasoning I had

    The scallops! Beautiful pieces of deliciousness! These will be simple...

    Salt and pepper, drizzle with olive oil

    Step 30

    On the grill, scallops 2-2.5 minutes a side and fish, 4-5 minutes a side. Flip once it will release fairly easy once it's ready to flip.
