How to Cook a Hearty Irish Beef Stew

An amazing Irish stew with a great taste for a hearty meal on a cold night or when you need a good homey stew! :)

Supplies

  • 2 Pounds Cubed Chuck roast
  • 1 Teaspoon Salt
  • 2 Teaspoons Pepper
  • 3 Tablespoons Olive oil
  • 1 Yellow onion
  • 2 Garlic cloves
  • 4 Ounces Tomato Paste
  • 4 Cups Beef broth or stock
  • 2 Teaspoons Worcestershire sauce
  • 3 Tablespoons Red wine
  • 3 Tablespoons Dark beer
  • 1 Tablespoon Sugar
  • 4 Whole Carrots
  • 1 Tablespoon Parsley
  • For Mashed Potatoes
  • 8 Potatoes
  • 4 Tablespoons Cream cheese
  • 4 Tablespoons Butter
  • 2 Tablespoons Heavy Cream
  • 1 Teaspoon Salt
  • 3 Teaspoons Pepper
  • Instructions

    Step 1

    Gather up ingredients!

    Step 2

    Cube your roast or get it pre-cubed.

    Step 3

    Heat the olive oil in a Dutch oven or deep pan.

    Step 4

    Brown your meat on each side. Until medium done.

    Step 5

    Brown all of your meat, in batches as to not over crowd the pot. Then set aside.

    Step 6

    Chop and then sauté your onion in the same pot, also add garlic. When sautéed, add the tomato paste.

    Step 7

    Now add 3 tablespoons of wine!

    Step 8

    Then your beer! (But not this much, I made a doubled recipe!)

    Add beef stock and sugar!

    Step 10

    Then add the meat back to the pot.

    Step 11

    First!: bring to a BOIL then lower heat to simmer, cover, and let "stew" for 2 hours.

    Step 12

    After 2 hours, start your carrots! Peel and chop them.

    Step 13

    Add them to the pot, cover the pot, and let simmer for 30 minutes or until the carrots are soft.

    Step 14

    At this point, if your stew is too thin, add cornstarch(cornstarch whisked into cold water)or if too thick, add broth.

    Step 15

    Peel and chop potatoes, then put in a pot with cold water and bring to a boil and cook until soft all the way through.

    Step 16

    When potatoes are done, strain them. Then mash them and add cream cheese, butter, cream, salt, and pepper. And anything else you like in mashed potatoes!

    Step 17

    Serve in a bowl with your potatoes, garnish with parsley, and add a soda biscuit! Enjoy! :)
