How to Cook a Healthy Veggy Side Dish

Healthy and easy to eat with meat, fish or on its own

Supplies

  • ½ Onion
  • 1 Red or green pepper
  • 3 Garlic clove
  • 2 Potatoes (3 if small)
  • 1 Courgette
  • 1 Eggplant
  • 2 Small tomatoes
  • 1 Leek
  • 1 Can of chopped tomatoes
  • Salt
  • Instructions

    Step 1

    Get things ready. Chop the potatoes, courgette and eggplant in small cubes.

    Step 2

    Start cooking the onion, garlic and potatoes while your are chopping everything else

    Step 3

    Add leek and red pepper, keep cooking

    Step 4

    Add courgette, tomatoes and aubergine

    Step 5

    You can add some salt and cover. Check every now and again to see how cooked they are getting

    Step 6

    When the potatoes are halfway there, are the tin of chopped tomatoes and cover. Let it cook until the tomatoes are cooked and the potatoes soft. You can keep trying for salt and add if needed

    Step 7

    Yum, yum! Healthy and so tasty. It took about an hour from the very first picture until I put it on the table
