Gather supplies. Any veggies in your fridge will do.
Step 1: Cook noodles in plenty of water and drain.
Step 2: Combine ginger, shallots, salt, coconut milk and half the amount of water (use can to measure out half can) and bring to gentle boil on medium heat.
Step 3: Add veggies and let simmer for 1-2 minutes before serving.
Add noodles to bowl. Ladle veggies and broth. Top with snipped cilantro and a squeeze of lime.
