How to Cold Smoke Peach Salsa in the Alto-Shaam CTP Oven

Incorporate the cold smoking feature of the Alto-Shaam CTP oven to add a hint of smoke to a sweet salsa treat.

Supplies

  • 8 Ripe Peaches
  • 1 Red Onion
  • 2 Red Bell Peppers
  • 2 Jalapenos
  • 1 Cilantro Bunch
  • 1 Tablespoon Chili Powder
  • 3 Limes
  • Salt (to taste)
  • Instructions

    Step 1

    Place wood chips into a bowl of water and soak for 10-15 minutes.

    Step 2

    Peel the peaches and cut into small pieces.

    Step 3

    Place the peaches into a 2" steam table pan. Fill an additional 2" steam table pan with ice.

    Step 4

    Stack the peach pan on top of the ice pan.

    Step 5

    Place soaked woodchips into the smoke box.

    Step 6

    Attach the smoke box inside the CTP oven.

    Step 7

    Place the stacked pans into the oven and cold smoke for 12 minutes. Then, remove smoked peaches from the oven and set aside.

    Step 8

    Dice red onion, bell peppers, jalapenos, cilantro and add to the smoked peaches. Toss with lime juice and incorporate the chili powder and salt to desired taste.

    Step 9

    Serve cold with cinnamon sugar chips!
