How to Brew Barista Bruce's Chemex Brew

My Chemex brew method.

Supplies

  • 40 Grams Fresh, course ground, good quality fair trade coffee
  • 1 Burr Grinder
  • 1 Chemex drip coffee pot
  • 1 Hario pouring kettle
  • 640 Grams Water at approx. 90 deg Celcius
  • 1 Chemex Filter
  • 1 Digital scale
  • 1 Timer
  • Instructions

    Step 1

    Supplies. The coffee is "Bean There's" Fair Trade Rwandan. www.beanthere.co.za

    Step 2

    Put water on heat and wait for it to boil. You can also fill your pouring kettle with pre-boiled water.

    Step 3

    Weigh out 40g of the freshest beans possible.

    Step 4

    Grind beans on a course setting in a burr grinder (don't use a blade grinder as they chop beans, rather than grind them). I use the coarsest setting on my cheap Krups GVX2

    Step 5

    Place the four layered, square, Chemex filter paper in the Chemex by dividing the layers as follows: 3 layers spout side and 1 layer against the back of the carafe.

    Step 7

    Rinse the filter paper: this removes the paper taste and warms the Chemex. After this step, remove the filter paper, empty the carafe and replace the filter. Again, with 3 layers on the spout side

    Step 8

    Add the coffee grounds to the rinsed filter and settle by gently shaking until grounds are level.

    Step 9

    Slowly add 60g of the 90 deg C water to the grounds. This will start the bloom which is essential for a full flavoured cup.

    Let the coffee bloom for 40 seconds.

    Step 12

    With the timer still running, add the rest of the water (580 grams) slowly, in a constant circular motion. A pouring kettle will give you control over the pour. Do not pour on the filter.

    Step 13

    Near the end of the pour, pour slowly in the middle of the brew until you reach the final brew weight of 640g.

    Step 14

    The entire brew process after the bloom is 4 minutes.

    Step 15

    After 4 minutes, remove the filter, even if all the water has not filtered through.

    Step 16

    Swirl, hold up to the light and admire the clarity of your Chemex brew. Anticipate the smooth, round flavour you are about to enjoy.

    Pour into a heated cup.
