  • 1 Egg, room temperature
  • ⅓ Cups Vegetable Oil
  • ⅔ Cups Milk
  • 1 ½ Cups Tapioca Starch
  • ½ Cups Grated Cheese
  • 1 Teaspoon Salt
  • Instructions

    Step 1

    Preheat oven to 180c/ 400F. Grease small muffin pan generously. Place all ingredients except cheese in a blender and pulse.

    Step 2

    Now fold through grated cheese. I use a mix of Parmesan, mozzarella and cheddar.

    Step 3

    Pour the mixture till 3/4 full in each mold.

    Step 4

    Bake in the oven for 20 minutes, until all puffy and just lightly browned.

    Step 5

    Remove from the oven and let cool on a rack for a few minutes. Eat while warm or save to reheat later.
