How to Bake Tsoureki, a Traditional Greek Easter Bread

  • 180 Milliliters Milk 180 ml
  • 2 Tablespoons Yeast
  • 450 Milliliters Flour 450g
  • 180 Grams Sugar 180
  • 1 Teaspoon Mahlab
  • ¼ Teaspoons Miskeh
  • 1 Teaspoon Salt
  • 1 Orange zest
  • 1 Lemon zest
  • 2 Eggs large (120g)
  • 180 Grams Butter 160 +
  • Instructions

    Step 1

    Milk 180 ml (warm) + 2 Tsp instant yeast

    Step 2

    Mix Flour, sugar,mahleb, mastica, salt, orange zest and lemon zest. melt the butter when cold add to lightly beaten eggs. Then add to the milk butter. Now add the liquid to the flour. Knead 5 mins

    Step 3

    2 hrs after the dough would have tripled in size. Put it on a floured top. Knead for 1 min cut into 3 parts. Make 3 strands and make a braid.

    Leave to rise again

    Step 5

    Cover and leave for 2 hrs

    Step 6

    The finishing ingredients: the colored egg, slivered almonds for the top and an egg for glazing.

    Step 7

    Baste the risen dough with the egg yolk, sprinkle with slivered almonds and re baste over the almonds pressing lightly

    Step 8

    Insert the colored egg. Bake in a preheated oven 170 /30 mins

    Out of the oven. Leave to cool
