How to Bake 'Torta Calabrese' Walnut Cake-Calabria 🇮🇹

In Italy, the fall is the harvesting time of the walnuts. Especialy in the south, almost every house will have one or two walnut tree. So, now is the time to make torta di noci.

Supplies

  • 350 Grams Walnuts
  • 150 Grams Caster sugar
  • 30 Grams Granulated sugar
  • 20 Grams Corn starch
  • 4 Tablespoons Eggs large separated
  • Or
  • 5 small eggs
  • Instructions

    Step 1

    Egg yolks, egg whites, caster sugar and walnuts

    Step 2

    Step 3

    In a food processor, Grind the walnuts with 2 tbsp of granulated sugar and the corn starch. This will prevent the walnuts from clogging

    Step 4

    Zest the lemon

    Step 5

    Mix the walnuts with the egg-sugar

    Step 6

    Beat the egg whites and add in 3 times..FOLDING in the walnut mixture.

    Step 7

    22 cm mould. Buttered, floured and lined with parchment paper

    Step 8

    Put the batter in the mould the put in the oven

    Step 9

    Bake 50 mins in a preheated oven 180 C

    Decorate with walnuts and icing sugar. May b it would better to cut it into parts while it is still warm.
