These are super easy, quick, and tasty! You can adjust the sugar down to 1 cup like I did and top them with anything you like.
Gather your ingredients. I did not have pumpkin pie spice so in place I used 3/4 teaspoon ground cinnamon plus heaping 1/4 teaspoon each ground nutmeg and ground ginger.
In a medium size bowl, combine all your ingredients except the flour. I lowered my sugar down to 1 cup but that's for health reasons.
Mix until smooth!
Add your 1 and 3/4 cups of flour.
Mix just until combined.
Fill your doughnut pans full and bake at 350 degrees Fahrenheit for 15 minutes. They are done when you poke them a toothpick and they come out clean!
You can eat these plain, top with a glaze or just simply dip them in some cinnamon sugar.
