How to Bake Pate in an Alto-Shaam Cook & Hold Oven

Use your Alto-Shaam cook & hold oven to slowly cook a tender delicious Pate without a water bath.

Supplies

  • 1 Tablespoon black pepper
  • 6 cloves
  • 2 bay leaves
  • 1 Teaspoon dried thyme
  • 3 Pounds ground pork
  • β…“ Cups diced onion or shallot
  • ΒΌ Pounds mushrooms
  • β…“ Cups pistachio
  • β…“ Cups white wine
  • 2 Tablespoons cognac or brandy
  • 1 Tablespoon corn starch
  • 1 Tablespoon kosher salt
  • 1 Teaspoon chopped garlic
  • Instructions

    Step 1

    Add all ingredients to the ground pork

    Step 2

    Mix well. cover and let sit overnight

    Step 3

    Place meat mixture into terrine. Push down to remove any air pockets.

    Step 4

    Bake in an Alto-Shaam cook & hold oven at 250F (121C) probe to 150F (66C) and set hold at 150F (66C). When at probe temperature, remove, weight and chill.

    Step 5

    Unmold and ready to serve
