Preheat the oven to 250F degrees
Line two cookie sheets with parchment paper
Separate egg whites from four large eggs
Add a pinch of salt to the egg whites
In the bowl of an electric mixer with the whisk attachment, whisk on medium speed until the eggs are very white and just beginning to hold their shape
Whip in a half cup of the sugar, 1 tablespoon at a time. Continue to whip the whites until they are stiff but not dry.
Remove the bowl from the mixer and use a large rubber spatula to fold in the remaining half cup sugar
If you want to add a filling into your meringue fold it in now. In this case I'm going to add crystallized ginger (about 1 cup, cut into a 1/4 inch dice)
Use a teaspoon to form irregular mounds about an inch apart on the pan
Bake the meringues for about 45 minutes until they are crisp, but still slightly moist on the inside
The Meringues will be slightly browned when done. Take them out and let them cool in the pan. Enjoy!
