How to Bake Lemon and Poppyseed Muffins

Perfect recipe for lemon and poppy seed muffins

Supplies

  • 2 Lemons
  • 220 Grams Caster sugar
  • 335 Grams Self raising flour
  • 85 Milliliters Lemon juice
  • 250 Milliliters Milk
  • 60 Grams Melted butter
  • 2 Free range eggs
  • 2 Tablespoons Poppy seeds
  • Instructions

    Step 1

    Get all of your ingredients ready

    Step 2

    Weigh out the sugar and grate the lemon zest into it, then rub the two together in the bowl

    Step 3

    Remove 3 teaspoons of the mixture and set aside on a plate, then add the rest of the mix to a large bowl

    Step 4

    Add in the flour and poppy seeds to the lemon and sugar mix. Then combine the mixture and make a well in the centre

    Step 5

    Add all of the wet ingredients in a bowl and beat until mixed

    Step 6

    Preheat the oven to gas mark 6 / 200 Celsius

    Step 7

    Place 12 muffin cases in a muffin tray and set aside

    Step 8

    Pour the wet mix into the well of the dry mixture

    Step 9

    Mix until just combined

    Step 10

    Place a tablespoon of the mix into each case, and sprinkle with the sugar and lemon mix that was placed to one side

    Step 11

    Place in the oven for 20-25 mins

    Step 12

    Remove from the oven and leave to cool if you can without eating one :)

    Step 13

    Then your left with the best muffin perfect with a cuppa or a tea time treat enjoy!!!!!
