How to Bake Japanese Red Bean Buns

Supplies

  • 3 ¾ Cups Bread Flour - Sifted
  • ½ Cups All Purpose Flour - Sifted
  • ⅓ Cups Sugar - Sifted
  • 1 Teaspoon Salt - Sifted
  • 2 ¼ Tablespoons Dry Yeast
  • ⅓ Cups Butter - Room Temperature
  • 2 Eggs Beaten
  • ⅔ Cups Warm Milk
  • ⅔ Cups Warm Water
  • 1 Egg (For Glazing)
  • 1 Tablespoon Water (For Glazing)
  • 1 Tablespoon Black Sesame (Optional)
  • 1 Packet of Cooked/Sweetened Red Bean
  • Instructions

    Step 1

    Let's start baking some awesome goodness!

    Step 2

    In a large mixing bowl, combine the flours, sugar and salt.

    Step 3

    Add the dry yeast and mix well.

    Step 4

    After mixing, it should look like this.

    Step 5

    Add 2 eggs, warm water and warm milk. Make sure they are lukewarm so that the yeast becomes active.

    Step 6

    Mix at low speed until the mixture is well combined and smooth.

    Step 7

    The dough should look like this.

    Step 8

    Add butter to the dough. Mix well on low speed until combined.

    Step 9

    The dough should look like this. Leave the dough in a warm place and allow it to rise and double in size.

    Step 10

    Leave the dough alone for 45 minutes.

    Step 11

    The dough should have doubled like this. Punch the dough.

    Step 12

    Place the dough on a floured surface and cut into 2-3 inch pieces like this.

    Step 13

    Lightly cover the dough pieces and let it sit for 15 minutes.

    Step 14

    While you're waiting, get the red bean filling ready. Make round balls of red bean with the palm of your hands - roughly 1 teaspoon large.

    Step 15

    On a floured surface, roll out dough piece to about 3 inches.

    Step 16

    Place a red bean ball in the middle of the dough.

    Step 17

    Wrap the dough around the filling. Roll the dough into a round ball without any openings to make sure the red bean does not come out while baking in the oven. Repeat for all the dough pieces.

    Step 18

    Cover the pieces with Saran Wrap.

    Step 19

    Let the dough rest for 15 minutes.

    Step 20

    Beat 1 egg and add 1 Tablespoon of water for the glaze.

    Step 21

    Using a small spoon, slightly flatten the middle of the dough. Brush each piece with the egg glaze. Cover the pieces with Saran Wrap.

    Step 22

    Let the dough rest for 45 minutes.

    Step 23

    Relax and take a stroll with your furball while you wait!

    Step 24

    Your dough pieces should have increased in volume like this. Preheat oven at 375 degrees.

    Step 25

    Brush the egg glaze again. Sprinkle black sesame on top (sesame is optional).

    In the oven they go! Bake for about 12-17 minutes until browned.
