In the bowl of a free standing mixer, put the yeast add a bit of the warm water an the tsp of sugar. In the meantime➡️
⬅️ put the flour in a BIG mixing bowl and add the 60 ml olive oil
Rub the oil into the flour like you would do the crumble.
Sart add the flour while the machine is running on low
When the dough is ready, transfer to the big mixing bowl. Cover and let proof. 2 hrs
Transfer to the baking tray and spread it. It should be 1 cm thick. Here I have a tray 22cmx32cm. Cover and let proof again 1 hr
After 1 hr, make dimples in the dough (the way you fancy) and decorate with rosemary, baste with olive oil and sprinkle the coarse salt. Ready for the oven
