How to Bake Czech Baby Biscuits (Piškoty)

by Lucie & Muffy

Delicious biscuits! Kids and adults of all the generations in Czech Republic love these.

  • 100 Grams All purpose flour
  • 90 Grams Confectioners sugar
  • 3 Eggs
  • 1 Teaspoon Vanilla extract
  • Instructions

    Step 1

I don't remember how this thingy is called in English, but you will need it :) I got it from the dollar store for $2. Used the upper left one (wide and round hole).

    Step 2

Lightly grease your cookie sheet and cover it with a thin layer of flour. Shake off any excess flour that doesn't stick. Preheat your oven to 350F (180C).

    Step 3

Have your flour and sugar ready. Separate yolks and whites.

    Step 4

Add a pinch of salt and start whipping your whites and keep going for good 10 minutes. You'll know you've done it right if you flip it upside down and it will stay firm.

    Step 5

Start whipping your whites again and slowly add about 1/3 of your sugar.

    Step 6

Add a tsp of vanilla to your yolks, the rest of your sugar and give it a good whip too :)

    Step 7

Take a spatula, dump your whites in the yolks bowl and slowly combine. No stirring! More like lifting it up from the bottom, you want it to stay fluffy.

    Step 8

Now start adding one tbsp of flour at a time and gently working it in.

    Step 9

Yup, now that's more like it!

    Step 10

My first batch, I made them too big and the first few too close together...

    Step 11

And also had them baking for little too long. Now scrape them off and do it again!

    Step 12

I experimented a little with smaller sizes to find the perfect one for next time :)

    Step 13

They are ready when the edges start to turn slightly golden. My stupid old stove likes to burn stuff in different spots :| now scrape them off and let them cool down :)

    Step 14

The biscuits should be evenly "dry" all through. They're not supposed to be spongy biscuits.

    Step 15

Left side is pretty much what you should be aiming for. Smaller biscuits with a golden bottom. Right side are the fat asses from the first batch that baked too long.

    Step 16

Voila! Delicious biscuits! Kids and adults of all the generations in Czech Republic love these. They can be a yummy part of many deserts like Tiramisu or... I'll save that for my next guide :)

    Step 17

These are often used as baby/kids food. Me and my sis used to love dipping them in tea or cocoa. Good stuff to eat if you're sick and have to diet cause of an upset stomach! :)
