How to Bake Buttermilk Biscuits

Chef John Lamkin, of San Francisco restaurants Street and Crave, shows how easy it is to create flaky and mouthwatering buttermilk biscuits.

Supplies

  • 6 Cups Self-rising flour
  • 2 Cups Butter, cut into chunks and chilled
  • 1 Tablespoon Sugar
  • 1 Cup Heavy or Whipping Cream
  • 2 Cups Buttermilk
  • 1 Tablespoon Salt
  • Cake flour (for dusting surface)
  • Instructions

    Step 1

    Mix dry ingredients and incorporate butter.

    Step 2

    Add buttermilk and cream.

    Step 3

    Gather the dough.

    Step 4

    Fraisage and pat.

    Step 5

    Roll and fold.

    Step 6

    Roll it out.

    Step 7

    Cut the biscuits.

    Step 8

    Place on baking sheet.

    Step 9

    Bake at 450 degrees for about 15 minutes.
