Are you ready to make some boozy lemon bars? I used IPA since that's all I had in my fridge!
Add 1 cup flour, 1/3 cup powdered sugar, 6 Tbsp unsalted butter and 1/4 tsp salt into a mixing bowl.
Mix until well combined.
The mixture should look like this!
Grease a baking pan (I used a 9x12 pan). Press this mixture into the bottom of your greased pan.
Chill the pan in the refrigerator for 15 minutes. Preheat the oven to 350 degrees.
Remove the pan from the fridge and place in the oven.
Bake for 25 minutes.
The crust should look like this.
Cool for 15 minutes or until it cools to room temperature.
In a mixing bowl, combine 3 eggs, 1 1/2 cups sugar, 1/4 cup flour and 2 Tbsp cornstarch.
Whisk until well combined.
Add 1/3 cup squeezed lemon juice and 1/4 cup beer to the mixture.
Mix until well combined like this.
Pour this filling mixture over the crust in the pan.
The lemon bars should look like this.
Allow the lemon bars to set and cool for 4 hours. It's best not to cut the lemon bars before 4 hours!
Cut the lemon bars and dust them with powdered sugar! Enjoy!!
