How to Bake Banana Bread in the Alto Shaam Combi CTP

Supplies

  • 1 Bunch Bananas
  • 1 ¾ Cups AP flour
  • 1 Teaspoon Baking soda
  • ½ Teaspoons Salt
  • 8 Tablespoons Unsalted butter, melted
  • 2 Eggs
  • ¾ Cups Brown sugar, packed
  • 1 Teaspoon Vanilla extract
  • 2 Teaspoons Granulated sugar
  • Chopped chocolate
  • Instructions

    Step 1

    Assemble the ingredients.

    Step 2

    Preheat 7.20 oven convection mode at 325F (163C).

    Step 3

    Sift flour, salt & baking soda into a bowl.

    Step 4

    Any leftover salt in the sifter, add to the mix.

    Step 5

    Place peeled bananas, excluding one, into a perforated pan.

    Step 6

    Steam at 212F (100C) for 8 minutes until soft.

    Step 7

    Mash steam bananas in a mixing bowl making sure to leave a few chunks.

    Step 8

    Take the leftover banana and granulated sugar and place into a sauté pan over low heat until it resembles a puree.

    Step 9

    Run the banana puree through a tamis.

    Step 10

    Add your concentrated puree to the mashed bananas.

    Step 11

    Melt the butter in steam mode at 212F (100C) for 5 minutes, then cool slightly.

    Step 12

    Mix in the eggs, brown sugar, vanilla, and melted butter to the bananas.

    Step 13

    Mix until combined.

    Step 14

    Add the sifted flour.

    Step 15

    Mix until combined.

    Step 16

    Add chopped chocolate pieces.

    Step 17

    Spray bundt pan generously with pam spray.

    Step 18

    Add banana mix to the bundt pan.

    Step 19

    Place bundt pan into the oven.

    Step 20

    Bake in convection mode at 325F (163C) for 40 minutes.

    Step 21

    Allow to fully cool before serving.

    Step 22

    Drizzle with a vanilla rum glaze and serve in warm slices!
