How to Bake Apple and Custard Tea Cake

I have never ordered or eaten this cake before. Its 15/7/2016. My dear hubby felt like having this cake.After scouring recipes I stumble upon this. Its moist yet crunchy, not too sweet yet flavorful.


  • 150 Grams Butter (softened)
  • ½ Cups Caster Sugar
  • 1 Teaspoon Vanilla Extract
  • 2 Eggs, room temperature
  • 2 ½ Cups SR Flour
  • 1 ½ Cups Full Cream Milk
  • 2 Medium sized Apples
  • 300 Milliliters Full Cream Milk
  • 1 Tablespoon Sugar
  • 3 Tablespoons Custard Powder
  • ⅓ Cups Dessicated Unsweetened Coconut
  • Instructions

    Step 1

    Preheat oven to 160C. Make a thick custard with 300ml milk, 1tbspn sugar and 3 tbsp custard powder.

    Step 2

    Allow the mixture to cool.

    Step 3

    Using electric mixer, cream butter, sugar and vanilla until pale and creamy.

    Step 4

    Add eggs, 1 at a time, beating well after each addition. Transfer mixture to a larger bowl

    Using a large metal spoon, fold flour and milk alternately into butter mixture until just combined

    Step 6

    Spread half the batter into pan lined with baking paper. Grease the sides and base.

    Step 7

    Grate 2 apples with skin on. Gently squeeze excess juice and place the grated apples in the center of the pan, making sure it doesn't touch the sides of the pan.

    Step 8

    Dollop or place the cool custard on top of the apples.

    Step 9

    Sprinkle the desiccated coconut

    Step 10

    Spoon the remaining batter on top. Smooth the top with a spatula.

    Step 11

    Bake for 1 hour 20 minutes to 1 hour 30 minutes or until a skewer inserted into centre comes out clean.

    Step 12

    Cool completely in pan. Lift from pan and serve. One of the things that Iove about this cake is the crust. When you start slicing a piece you can hear the crunch of the batter.
