First preheat your oven to 170C.
Start with placing banana, sugar, oil, egg and vanilla extract (if you are using) in a clean bowl. I am using Azalea Baking Oil that is flavored with Almond & Walnut Oil and Vanilla Bean. Love this.
Blend the wet mixture.
Now add all the dry ingedients (except walnuts). And mix. Do not over mix as we do not want to loose the air bubbles.
Now add roughly crushed walnuts and stir once.
Pour the mixture in a loaf pan that has been greased well and sprinkled with plain flour - for the ease of removing the loaf.
Bake it for an hour till skewer comes out clean. You could also steam the whole cake for about 45 minutes till the skewer comes out clean.
The Banana Loaf is ready for serving. Its a great addition to a lunchbox.
