How to Bacon & Capers Patties

by Karin Siöö

Another recipe on patties: these are very tasty and not at all difficult to make.

  • 400 Grams Minced beef or 50/50
  • 4 Slices of bacon
  • 1 Slice of bread
  • 100 Milliliters Milk
  • 2 Tablespoons Capers
  • 2 Tablespoons Mustard
  • 50 Milliliters Grated onion
  • 1 Milliliter Egg
  • ½ Teaspoons Salt
  • The sauce:
  • 100 Milliliters Water
  • 250 Milliliters Cream (15% fat)
  • 1 ½ Tablespoons Balsamic vinegar
  • 1 Tablespoon Beef broth
  • Instructions

    Step 1

    Fry the bacon.

    Step 2

    Chop it finely.

    Step 3

    Drain the capers.

    Step 4

I had cocktail capers that are a bit bigger than the regular ones so I chopped them (which isn't necessary with the small ones).

    Step 5

Crumble a slice of white bread.

    Step 6

    Like so.

    Step 7

Add milk and let soak for 5 min.

    Step 8

In a bowl mix minced meat with the bacon.

    Step 9

    Add grated onion..

    Step 10

..the soaked bread, capers, egg, mustard and salt.

    Step 11

Mix thoroughly but do not over-do it.

    Step 12

Form patties and fold the bacon around each patty.

    Step 13

Like so. We cut the bacon lenghtwise before wrapping the patties.

    Step 14

Fry the patties in butter in a skillet. We only browned them on the stove, then we put them in the oven until ready.

    Step 15

Save the meat juices that are left in the skillet. Add some water, then through a sieve, pour it into another pan. In it we will make the sauce.

    Step 16

    Like so.

    Step 17

Add water, cream, balsamic vinegar and beef broth of some kind. We used a balsamic vinegar with figs and dates. Use what you can find.

    Step 18

If you use regular balsamic vinegar perhaps you want to add some flour to thicken the sauce.

    Step 19

When done, take out from the oven and sprinkle some fresh thyme on top before serving.

    Step 20

Serve the patties with a salad and/or potatoes of your choice.
