  • Beef blade steaks
  • Salt & pepper
  • Alto-Shaam cook & hold oven
  • Instructions

    Step 1

    Use a 1-2lb steak

    Step 2

    Season steak

    Step 3

    Preheat to 200F (93C). Set hold at 132F (55C).

    Step 4

    Sear in a pan

    Step 5

    Probe to 20F (-7C) less than desired final serving temp

    Step 6

    Leave meat to rest at up to132F (55C).
