Mix in the flour really well. We want the potato semi-stiff.  After you have done this, put this in the fridge to chill for an hour.The potatoes MUST be chilled or they will fall apart.

Now lets make our batter. Put the 1 cup of  flour In a bowl.

Add a packet of sazon with culantro and achiote.

After the batter has chilled, put some flour or  water in your hands cause this will be messy and the mashed potato tends to stick to the hands.

I highly suggest if you have an Icecream scoop put it to use now. I didn't have one so I eyeballed how big I wanted the potato ball. With a scoop they all come out the same size.πŸ‘Œ

Oh yeah, turn your deep fryer on and set it to 350 or 375deg it really depends on how good your deep fryer is. We will need it hot for later. U don't have one, no biggy just fry them in plenty of oil.

Take a scoop full of potato,   Scoop some out into your hands and start flattening it down with your fingers until rounded. Use flour if needed. Add a tbs of meat in center and close the potato.

Take the 2/3 cup of flour put it in a plate and dredge the potato balls in it. Be gentle. Make as much as you want put them In a plate and stick it  in the fridge to firm up. Easier for the next step.

Take a spoon with holes it's easier. I misplaced mine😩😩.Put your potato ball on it and drizzle the batter over it. Hey it beats getting your hands messy.πŸ˜›

If you don't want to get messy, you can also go another route. Beat an egg or two, dip the potato ball in it then proceed in dipping it in flour or breadcrumbs and fry. Not my preferred method.😎
