@Matthew yes I've done that before and it works pretty well. Get all your music in quick though YouTube is working on a way to squash this.

Yes there are jailbreaks already for the upcoming iOS 6 as well as all releases of ios 5. But after jail breaking you can no longer update OTA. (As far as I know)
