Add a little baking soda to the boiling water with the egg and take out when timer is done. No need to worry about a difficult time peeling your eggs ever again!!

i go a different route: drop the egg in the cold water in the pot. high heat until it boils (covered). as soon as it boils, take it off the heat and let rest for 2:30 (or closer to 3:00 for a very large egg). then drop in cold water when the timer is done. but i'll give this a shot to see.

I never test any of my eggs, ever and have never eaten a bad egg to my knowledge. But I use only hormone grocery store eggs from chicken factories. :(. What made/makes you test your eggs and why are/do air pockets make them bad?? Thx.
