A lot of people out there are afraid of cooking fish. I always suggest learning how to cook fish by searing ahi. It's quick, it's easy and it tastes awesome. Please let me show you how I do it.
Here's my fresh ahi tuna steak.
I seasoned the tuna with salt and pepper according to my taste. I go light on the salt but heavy on the pepper.
Add some olive oil to a HOT pan. You won't sear it properly if the pan isn't HOT
Test the pan by lightly pressing the fish against the surface. If it sizzles, you're good to go.
Watch the change in color as it cooks. The higher the line goes, the better it's cooked.
It's about right for me, so I'll turn it over.
This what a proper sear should look like. Notice the color and crust.
Remove the fish after your desired doneness and let rest for 5 minutes.
Internal view of the fish. This is in my opinion a perfect sear. Raw in the center and slightly cooked top and bottom.
I served it up with a quinoa and brown rice blend and wasabi sauce.
And here are some examples of other dishes that I've made using seared ahi.
My seared ahi with olive oil and soy vinaigrette and garlic rice.
Seared ahi again with veggie rice pilaf.
